docs: clarify where certain information is received from

Hackathon feedback:

In the docs, code snippets participants often struggled to understand where they were supposed to have received certain information to pass in as parameters for the subsequent requests. So instead of saying “access token” it would have helped to know this was the access token that was returned from the quote grant request for instance.
